As far as I know the wizard to create a new VM does not have the option to use an existing vmdk.
So you would create a new VM with the wizard.
Then close the wizard and then edit the settings of the VM.
Remove the newly created vmdk and add a new vmdk.If I remember right now you should be able to assign an existing vmdk.
But your suggestion will of course work as well.
Just rather edit the vmx file if the name of the new vmdk does not match than rename the existing vmdk.
